BAKED QUAIL RECIPES Angelica's Quail in Wine Cream Sauce Shake quail in a bag with four, salt and pepper. Brown in melted butter in a skillet over medium-high heat until browned on all sides. Remove from skillet and arrange in an oven casserole with cover. When all birds are browned, add white wine or sherry to the skillet. Then mix in remaining ingredients. Mix well and bring to a boil, then pour over the quail. Cover and bake at 325 degrees for 1 to 1.5 hours, or until done and tender.
