Texas Gourmet Quail

      The Diamond H Ranch in Bandera, Texas began raising quail, pheasant and chukar game birds for range restocking, hunting and game preserves in 1991. In 1995, with support and encouragement from Texas A&M University, the Ranch began raising Coturnix quail to be processed and sold as meat birds. Since 2002, the Ranch has been collecting eggs from hens housed in a German built, state-of-the-art, automated breeding facility. Once collected, the eggs are incubated, hatched and moved to brooding pens and allowed to grow to maturity.
      Quail are fed starter and grower rations that are formulated to exacting specifications. The special grain mixture contains no medication. Vitamins and electrolytes are added to meet the minimum requirements of the birds. At no time are steroids or antibiotics administered.
      The Diamond H Coturnix quail, which are marketed as Texas Gourmet Quail™, are 20-30% larger than Bob White quail. A dressed Coturnix weighs between 6.5 and 7.5 ounces. At maturity, the meat birds are processed and packaged at the Diamond H Ranch in the only State licensed game bird processing facility in Texas. All trimming, deboning and packaging is done by hand. A Texas Department of Health inspector is on the premises to make certain all processing meets or exceeds USDA standards.
