GRILLED QUAIL RECIPES

Tom's Marinated Quail
Texas Gourmet Marinated Quail are seasoned with Tom's custom blended seasonings, then vacuum tumbled and vacuum sealed. Once split, they can be opened and laid flat on the grill. Cook over medium heat, turning several times, until done and nicely brown.
*  Melted apple jelly with a dash of cinnamon
*  Stick of melted butter mixed with 1 jar of Durkees sandwich spread, the juice of 1 lemon and 1/2 cup of honey
*  Bottled barbeque sauce.
Semi-boneless quail are also excellent on the grill. Use your favorite seasonings and insert onion or jalapeno in the cavity, if desired. Grill at medium heat, turning often, until nicely browned. Just before removing from the grill, coat quail in a glaze, being careful not to let the glaze burn.  Several glaze suggestions are:

Morgan's Griddle Cooked Boneless Breast of Quail
Place a slice of fresh or canned jalapeno pepper on one side of each boneless breast. Fold over and secure with a toothpick. Season with your favorite seasons -- i.e. garlic salt, coarse ground pepper, seasoned salt, paprika, fajita seasoning, cajun spices. Place on hot buttered griddle and put weight* on top.  Cook, turning several times, until golden brown and done through out.
* Weight is needed to keep quail from curling.  It can be a heavy pan or plate. We use a 2x12 piece of lumber with a handle on one side.
